I don't remember my mom making a whole lot of slow cooker meals when I was growing up.
But there were a handful that she would make fairly regularly, one of which was slow cooker country style ribs.
The recipe was super simple and involved putting some boneless ribs, barbecue sauce and water into a Crock Pot and letting it cook for 4-6 hours.
The ribs were very easy to make and were a hit with our family! We often had these with egg noodles, rice, or mashed potatoes and some vegetables.
Now I have to say, I'm pretty picky about pork.
I love bacon, ham, and sausage, but when it comes to things like pork chops and ribs and pork loins, things start to get a little weird.
Maybe it's the way they are often prepared, but I usually don't particularly care for them. Often the texture is dry or rubbery, or sometimes the middle still looks pink, sometimes there just isn't much flavor, etc.
But BBQ country style ribs ribs are a different story. I love how tender they are, and the sauce is spicy-sweet perfection, just right for layering over your favorite carb!
Making Instant Pot Boneless Country Style Ribs
The other day, I wanted to make some of these BBQ country style ribs for dinner, but I didn't have enough time to cook them in the slow cooker.
Enter: The pressure cooker.
You guys know by now how much I LOVE my Instant Pot. I use it nearly every single day.
I have an ever-growing list of easy pressure cooker recipes that I make on the regular, so my Instant Pot stays pretty busy.

So, I followed these guidelines for converting a slow cooker recipe to a pressure cooker recipe. Instead of requiring 6-8 hours in the Crock Pot, these cook up in a mere 8 minutes. Yes, you read that right–8 minutes!!
Now, obviously it takes a bit of time for the cooker to come to pressure and to release pressure, but all in all, they're still typically finished in under 45 minutes. And they're moist and tender, just like they've cooked all day.
How to Make Pressure Cooker BBQ Country Style Ribs
It's so simple, I hesitate to even call this a recipe. Really, all you do is place the ribs into the insert pot of your Instant Pot.
Add in a bottle of your favorite BBQ sauce and some water (it's important to add some water, otherwise the sauce is too viscous and the cooker won't be able to achieve pressure), then stir it all up to combine it well.
Twist the lid on and cook for 8 minutes, followed by a natural pressure release.
After they are cooked, if you want to thicken the sauce a bit, you can add a slurry made with cornstarch and water, using the saute function to simmer the sauce until it's thickened. This step is optional and is based on your preference and what you're serving them with.
You can very easily shred the pork or cut it into chunks, or leave the ribs whole. I've done both and it's yummy either way!
These pressure cooker BBQ country style ribs are perfect served over Instant Pot brown rice, Instant Pot mashed potatoes, or a bed of egg noodles.
You could also serve them with pressure cooker southern style green beans!
Classic comfort food in a fraction of the time. What's not to love??

Prep Time 2 minutes
Cook Time 8 minutes
Additional Time 25 minutes
Total Time 35 minutes
Ingredients
- 1.5 lbs boneless country style pork ribs
- 18-oz bottle barbecue sauce
- 3/4 cup water
- 1 Tbsp cornstarch + 1 Tbsp water (optional)
Instructions
- Place ribs into the insert pot of an Instant Pot.
- Pour in barbecue sauce and water, stirring to combine well.
- Secure lid on Instant Pot and set vent to "sealed."
- Using the manual setting, select an 8 minute cook time.
- Once cook time is complete, turn unit off and allow a natural pressure release.
- After pressure has release and valve has dropped, carefully remove lid.
- If you desire the sauce to be a bit thicker, remove ribs to a plate and select the saute function. Whisk cornstarch and water together in a small bowl to create a slurry. Add mixture to the sauce in the insert pot, stirring well to combine. Allow sauce to simmer for 3-5 minutes, or until thickened to your liking. Return ribs to pot, stirring to coat with sauce.
- Serve over rice, pasta, or potatoes.
